Born and raised in Thailand\, Ui began her culinary journey with a food truck in Bangkok\, serving up delicious street food to locals and tourists alike. With her skill and dedication\, Ui moved to Canada and expanded her business opening three successful U & I Thai Restaurants\, in Vancouver\, Abbotsford and Mission. The Mission restaurant has now been taken over by her daughter Bee\, and is now named Bee Thai Cuisine\, which continues to delight diners with bold and flavourful dishes. Ui looks forward to teaching Thai Culinary Skills at Food by Fanta. Enjoy Northeastern Thai cooking by learning these dishes. \n\n\n\nMenu\n\n\n\nBanana Blossom Salad\, or “Yum Hua Plee\,” is a zesty and refreshing salad that hits every note\, featuring thinly sliced crunchy banana blossom combined with fresh herbs\, lime juice\, fish sauce\, and chili. It offers a delightful balance of sweet\, sour\, salty\, and spicy flavors. \n\n\n\nKaeng Om Kai is a flavorful chicken dish characterized by its aromatic curry broth. It features tender chicken pieces simmered with a blend of aromatic herbs and spices. The dish is known for its rich and complex flavors\, making it a beloved staple in the cuisine of Northeastern Thailand\, and is often served with sticky rice. \n\n\n\nKhao Niao Mamuang is a popular dessert that combines sweet sticky rice with fresh mango. DESCRIPTION:Chef Thammarat (Tom) Phorkphoonkham is a Canadian Red Seal-certified chef who specializes in Thai\, French\, and international cuisine. He was born and raised in Bangkok\, Thailand. While growing up in the central part of the city\, he lived on a small farm surrounded by coconut trees\, banana trees\, and various types of food. Cooking became an integral part of the culture that he grew to love\, and he often helped his mother prepare meals for the family. In 1999\, he left Thailand and moved to Seattle\, Washington\, USA\, where he worked at Thai restaurants until 2007. He then relocated to Vancouver\, BC\, Canada\, where he pursued his passion for cooking. He attended and graduated from a culinary arts program\, becoming a certified Red Seal chef in Canada. Thammarat has worked in various establishments\, including 5-star hotels\, fine dining restaurants\, hospitals\, and senior homes. \n\n\n\nOne of his signature dishes is Som Tum Tard\, which consists of Green Papaya Salad\, BBQ Chicken\, and Sticky Rice. Som Tum is a popular and widely available food in Northeastern Thailand. When you visit Thailand\, you can find Som Tum sold as street food alongside BBQ chicken\, BBQ pork\, sticky rice\, larb (ground beef or pork salad)\, beef salad (crying tiger)\, and tom zap (spicy soup). For an authentic Northeastern Thai meal\, it is best served with sticky rice and BBQ chicken. \n\n\n\nIn recent years\, there has been a trend of serving Som Tum in the middle of a large round plate with additional items placed around the edge. These extras include Moo Yor (Vietnamese pork sausage)\, Naem (fermented pork sausage)\, Khai Khem (salted egg)\, Century Egg\, and Khep Moo (fried pork skin).
